The food I cook is directly inspired by the regional ingredients available at that time with great consideration for the care that was put into them before they come to my door. My menus begin with a product list from farms such as Neversink and take shape organically from there rather than beginning with a dish or recipe and then sourcing is a second or third thought. I try to uphold the integrity of the ingredients by doing very little to nothing to them, so often times there is not actual 'cooking' at all. At this event, I will be able to allow the ingredients to 'speak' louder than ever as we will be preparing and serving dishes amongst the very fields where they are grown and harvested.
